The presence of biofilms on work surfaces in the food processing industry is a major risk factor when it comes to food safety.
Biofilms are groups of microorganisms which adhere to surfaces and produce extracellular polymeric substances (EPS) that cover them, protecting them from adverse environmental conditions.
The EPS confers resistance to microorganisms and forms a barrier against conventional cleaning and disinfecting procedures, which makes it difficult to remove the biofilm.
Biofilms can easily and quickly form wherever there is a hydrated environment and nutrients.
